    Abundantly hopped with Motueka, the nose releases all its sweet and intense tropical aroma and a delicate citric. In the mouth it is round.     Together with the Caffettin Microtorrefazione (which then dedicated itself to roasting), we chose the Arabica coffee, a typical variety, grown at 1500-2000 m asl; washed coffee. Alberto of the Chocolate Academy in Milan then recommended Dutch cocoa powder to complex the taste profile.

    Complex and intense beer. BR01 Vintage 2017 is part of our Cantina project, the name and place of where blends and special recipes mature in wood. Aged for 18 months in Caroni Rum barrels releasing characteristic warm liquor notes of vanilla, toasted wood and honey. Alcoholic, round, ripe and dehydrated red fruit (raisins) and dried (hazelnut) emerge on the finish.

    Blend of sour beers with peaches from our orchard. Sweet and sour, with a full body and great freshness, matured for 14 months in steel vats in our cellar.
    Peaches (2018 vintage) is a golden orange, slightly opalescent beer. It smells of cellar, wood and ripe peaches, flowers with a light touch of lactic. The acidity is pungent but well balanced by the fruity sweetness (yellow flesh fruit). The finish is very dry, acidic and leaves the mouth clean.

    We have tried to create the ideal burger, we grind with our hands cuts of Mazury beef raised in the wild ensuring its sustainability. Being hard to source we can only serve 28 Briciola Burgers per day. (14 in Casana and 14 in TapRoom).     Within the typology it stands out for its balance and delicacy. Clairin Communal was born from the union of four distillates from the island of Haiti, handcrafted from pure sugar cane juice. It is the ancestral agricultural white rum of the local population. The discovery of the ancient local production traditions and the desire to enhance the value of the many artisan distillers, whose work risks disappearing in the modern globalized world, has also led Slow Food to award this product with the title of Slow Food Sentinel: the cultivation of sugar cane takes place in polycultures without the use of pesticides or chemicals, the collection and cutting are carried out manually with a machete, the fermentation of the juice is wild, that is spontaneous, using only natural yeasts and the distillation is conducted with small direct fire discontinuous stills, legacy of French colonization. On the palate it is round, warm, enveloping and pleasant, with unmistakable wild and Caribbean tones.

It is in the Caribbean that the stills designed by the master distiller Gianni Vittorio Capovilla, and made in the German workshops of Müller, process the virgin juice of the sugar canes grown on the soil of Marie Galante. Today, Rhum Rhum is the best Rhum Agricole in the world. It does not require any dilution of the juice with water and no addition of chemical or acidifying agents, it then consists of long fermentations of 5/6 days at a controlled temperature, and of a double distillation in copper stills in a bain-marie followed by aging in French noble woods.

Bottled at full strength, it has a particularly high alcohol content, which satisfies the drink with a very enveloping heat.

    We have designed and created an ad hoc recipe. A very fragrant hopped beer with a bitter content, distilled by the Capovilla Distillery: a historic company from Rosà (Vicenza) recognized as one of the best distilleries in the world.
    The double distillation of the beer takes place in a bain-marie, at a low temperature, which allows maintaining a lively aromatic part, characteristic of the initial product. Following the CRAK distillate spends a period in steel vats, maturation which softens the aromatic and gustatory profile.
    The CRAK distillate smells of pear, flowers (violet), almonds and almond paste, a touch of honey and citrus. It has a vibrant and warming witty part, and can also be used as a base for making cocktails

    Craft Dry Gin – 42%

    Craft dry gin with Citra hops selected in Yakima Valley and lemon caviar, both added in distillation. Gin created together with Priscilla, distiller and guide of the Nannoni distillery. The flavor of the lemon caviar (a particular variety of citrus fruit) is a pleasant mix between lemon and grapefruit, which combines in an exceptional way the scent of the Citra hops that we have selected by hand (… or rather by nose) in the United States, during the harvest period.

    Near to our hops grove we had the opportunity to have and cultivate a small olive grove. Here we grow olive plants of different varieties. The harvested olives are then pressed to obtain the monocular extra virgin olive oil (of a single variety) that you can find here in our online shop. The land on which the olive trees grew are in Campoli del Monte Taburno, where the climate favours a healthy development of the fruit which has excellent organoleptic qualities.
    Each of these bottles contains mono cultivar extra virgin olive oil, that is extra virgin olive oil produced and obtained 100% from a single type of olives, produced solely by mechanical processes and unfiltered. In this mix, we offer you 3 different varieties to taste and compare to discover the different characteristics of each olive: Ambriane, Ortice, Spirina.
