Birraroma

Birraroma is a project set up about two years ago in collaboration with the University of Padua and other local farms with the aim of creating a model of supply chain integration between the world of agriculture and the world of beer by producing plant species for beer flavouring.

The work was carried out on two levels: on the one hand on small quantities of material to exclude plants that are incompatible with normal beer flavouring, and on the other hand in microbrewing to simulate the production behaviour of these beers on larger barrels.

The evaluation of the products was then carried out by successive exclusions of extracts that were of no interest from the consumer’s point of view, leading to a single beer: Rosa.

The aim of the project is twofold: on the one hand to propose new recipes for flavouring beer and on the other hand to propose a method for making them.

The expected results are therefore very simple and clear: definition of a methodology to create Botanical Beer and on the other hand to use herbs from our territory.
