News from Our Farm – Pasta and Olive Oil
The New Oil Is Back!
From our olive groves on Monte Taburno, we’ve once again harvested freshly invaiate olives—at the first stage of ripening—to bottle a unique oil, rich in polyphenols, vitamins, and antioxidants.
To honor the hard work done in the groves throughout the year and to bring out the best quality of our olives, we collaborate with the prestigious Frantoio Romano in Benevento, just a few minutes away from our olive groves. We chose this mill for its cutting-edge continuous cycle systems by the Pieralisi Group. These advanced systems ensure optimal processing at every stage, from washing to crushing, kneading, extraction, and separation.
Thanks to this innovative technology, our oil retains its extraordinary organoleptic and nutritional properties.
The 2024 harvest Olio Novello is available in several versions:
• Monocultivar Ortice, 0.5-liter bottle
• Blend Oliva Oliva Oliva Oliva Oliva, 0.5-liter bottle and 3-liter bag-in-box
And that’s not all… our artisan pasta is back too!
Our pasta is made with wheat grown annually on our farm, planted in fields we usually dedicate to barley cultivation to ensure crop rotation. This year’s harvest was so exceptional that we’ve created six new bronze-drawn pasta shapes. The bronze extrusion process gives the pasta the perfect texture and porosity to hold onto sauces—so feel free to go heavy on the condiments!
